Galangal (Alpinia Galanga) is a tropical rhizome of the ginger family (Zingiberaceae), known as greater galangal. The part used here is the root. Galangal is a major culinary spice in Southeast Asian cooking, where it flavors Thai curries and tom yum soup and appears in Indonesian dishes under the name laos. Is galangal the same as ginger, and what is greater vs lesser galangal?
Galangal and ginger are often confused, so here is the distinction.
